Commissary Kitchen
Sal’s Pizza is made by procuring only the freshest and finest quality pizza-making ingredients. And to ensure the highest standards for quality and consistency are met in every Sal’s Pizza pizzeria, we use these raw ingredients to create our signature dough, sauce and cheese at our state-of-the-art central production facility just before shipping them to each location to be made into the biggest, freshest, tastiest pizza around!
We make our dough the old-fashion way by combining by hand 50 lb bags of fresh semolina wheat flour, yeast, water and imported Italian extra virgin olive oil into giant mixing bowls. After it is mixed, the dough is progressively cut into smaller and smaller chunks which then shoot through a roller to form them into a dough ball. The dough balls are placed into bins then sent straight to the refrigerated shipping dock to be loaded for delivery to the pizzerias.
We use only 100% mozzarella cheese and shred it to order, never coating the flakes with an anti -clumping agent. Coating the cheese not only masks the sweet, fresh flavor, it causes the cheese to burn during the cooking process.
Our pizza sauce is made in small batches by combining tomatoes from select California growers, olive oil, salt and spices into large containers. The fresh ingredients are then stirred together by hand and, like our dough and cheese, are sent right to the shipping area for delivery at the completion of each batch.
During peak seasons of pizza sales, our commissary kitchen will run three shifts, 24-hours.
